Fiesta Tuna Salad

Not a boring tuna salad, we promise. It's actually kind of a little spicy.

On a mission to make boring tuna salads a thing of the past. Canned tuna is great, especially if you opt to purchase a sustainable brand such as Wild Planet. Tuna is also a great source of Omegas, which we all need. This is even more important for pregnant and breast feeding mamas. I (Ives) am literally pumping as a I write this-- so you know it is a legitimate source of info. Oh and lets also appreciate that tuna now comes in pouches. This is a grab and go staple in our pantry for easy work lunches or even for a protein packed snack after a sweat session/training.
Prepares 2 Servings
Prep Time: 10 minutes
The Goods:
5 oz can of tuna in water, drained
1 avocado, pitted and cubed
2 Tbsp tomatillo or any salsa
a little less than 1/4 C thinly chopped red onion
1 tsp minced jalapeno, optional
Squeeze of lemon (I use half a lemon)
Himalayan pink salt and fresh cracked pepper

How To:
  1. Place tuna, onion, salsa, jalapeno, and half the avocado in a small mixing bowl.  Mash the avocado into the the other ingredients.  Make sure to thoroughly mix.
  2. Add remaining half of avocado, squeeze of lemon juice (about 1 tbsp), salt and pepper.  Mix together gently to leave avocado in chunks.  
  3. Serve with grain free tortilla chips, cucumber slices, or on your favorite bread as an open-faced sammie.
