Cozy Pumpkin Spice Latte

Have you ever heard of the practice of Hygge?? I'm about to fill you in on a little life secret. We all need a little bit of Hygge in out life on a daily basis and this warm Pumpkin Spice Latte did it for me this weekend. 

Meik Wiking, the author of The Little Book of Hygge: Danish Secrets To Happy Living, and CEO of the Happiness Research Institute in Copenhagen, tells SELF Magazine that hygge has been called everything from “the art of creating intimacy,” to “coziness of the soul,” and even, “cocoa by candlelight.” In his book, Wiking explains that you know hygge when you feel it, but that some of the key ingredients are togetherness, relaxation, indulgence, presence, and comfort. “The true essence of hygge is the pursuit of everyday happiness and it’s basically like a hug, just without the physical touch,” he says.
So slip on those cozy socks, snuggle up under a warm blanket, light that candle, and make this Pumpkin Spice Latte.

Prep Time: 5 minutes

The Goods:
1-2 cup of brewed hot coffee, brew any way you like (if you have an espresso machine, you can of course sub for two shots of espresso, simply add more liquid)
1/2 cup full fat coconut cream (purchased mine for Trader Joes, love that they don't add guar gum), you can also use Oatley or another milk of choice
1 tsp local raw honey (more or less depending on the sweetness you prefer)
1-2 tbsp pumpkin puree (depending on how much pumpkin flavor you prefer)
1 tsp cinnamon
1/2 tsp pumpkin pie spice

How to:
  1. Pour all ingredients into a blender and blend until frothy.
  2. Pour into a mug and top with Coconut Whipped Cream and sprinkle with cinnamon.
  3. I got the coconut whipped cream from Trader Joe's. This one is not completely clean, but it makes me happy and since I'm not adding this to my coffee every day, I went for it. It's a treat that brings some Hygge into my life and a little nostalgia from my childhood.
