Superfood Slaw

See the rainbow, taste the rainbow --not just for Skittles but for this nutrient-dense slaw too.

It's not just another slaw, it's a superfood celebration. This slaw is loaded with nutrients and vitamins. When the ingredients are fresh, you don't need to mask them with mayo or other additives. There is a natural sweetness from the apples and carrots, an earthiness from the beets, a crunch from the cabbage, and the zesty vibes of citrus and ginger. Store it in the fridge to throw into weekly salad bowls, top on sammies, or just eat it by itself. Oh and feel free to tweak it so it works for you and your family.

Prepares: 4-6 servings
Prep Time: 30 minutes

The Goods:
4 C thinly sliced purple cabbage (core removed)
1 1/2 C raw beets, scrubbed, peeled and grated (~2 beets)
1 bunch thinly sliced dino kale, stem removed
1 1/2 C carrots, scrubbed, peeled and grated (2-3 carrots)
1-2 apples, peeled, cored and sliced to match sticks
optional, 1/2 C fresh herbs (cilantro, mint, parsley)

Dressing
4 Tbsp lemon or lime juice
3 Tbsp extra virgin olive oil
1 Tbsp ginger, grated, peeled, and minced

How To:
  1. In a large mixing bowl, whisk together the dressing ingredients.  Add the slaw ingredients to dressing and toss to combine.  
  2. Refrigerate for at least 1 hour before serving and toss before serving.  Store in an air tight container in the refrigerator for 3-5 days.
