Cozy Breakfast Quinoa

This breaky dish was introduced to Ives by her mother-in-law when they were camping. Ives and Andy had just summited Mt. Rainier for their one year wedding anniversary and a warm quinoa bowl was the perfect treat in the AM. This is great to meal prep for a healthy weekday breakfast or serve for a large crowd. If you make extra quinoa, stash some in the refrigerator for salads and sides to accompany meals!
Makes 4 servings
The Goods:
1 C dry tri-color quinoa**
Toppings:
1/2 C fresh fruit (berries, mango, banans, peaches all work great)
1 Tbsp nut or seed butter of choice
1-2 tsp grade A maple syrup or sweetener of choice, optional
other optional toppings: cinnamon, chia seeds, ground flaxseed, raw coconut flakes, nuts
How To:
- Rinse quinoa in mesh strainer. Combine the quinoa with 1 1/3 cups of water and bring to a simmer over high heat. Reduce heat to low and place lid on pot. Cook for 15 minutes and then remove from heat and allow to steam for ~5 minutes before fluffing with fork.
- If quinoa is already prepared then reheat 1/2 cup cooked quinoa in microwave safe dish for 30 seconds until warm.
- Drizzle maple syrup and nut butter over the quinoa and serve with fresh fruit and other desired toppings.
